Christmas Crack Corn

Crack Corn! OMGoodness! 2 bags Chester's Butter Puffcorn 1 pound vanilla candy coating 1 bag whit chocolate chips. Melt chocolates together in large pot. Gently fold in two bags of puffcorn. Lay out on tinfoil to dry. Decorating with colors optional. *warning highly addictive* enjoy and Merry Christmas!

{Clean Pizza with ground Chicken as crust}

Wait... I know sounds crazy right? Wrong! It's amazing!!!


This is adapted from He & She eat Clean (Thanks)

Preheat Oven to 350F

Crust:

1lb Ground Chicken or Turkey
Italian seasoning
Basil
Garlic Powder
2 egg whites
1/2 cup oats

Mix together and roll out


Bake at 350F for about 20min. Then take out and top with sauce and toppings.

I made fresh pesto:

1/4 cup olive oil
few bunches of fresh basil
2 cloves garlic
1tsp pine nuts

blend together in food processor.


Slather on top! Then top with your favorite toppings. I used this slided tomatoes and grated just a tad of fresh parm.




bake at 350F for another 10min... Then try not to eat it all!

{Lego Cupcakes}

My son wanted Lego cupcakes for his class. So, I did some research and here is how they turned out...



1st I purchased the mini lego guy ice tray from http://www.lego.com/ and colored chocolate disk. Fill each section with desired color of chocolate. I found the baggies with a small snip in the corner worked really well. Pop them in freezed for 5-10 minutes.


When they are finished push out of tray.


Then I used black food coloring and a toothpick to draw on the face. Let dry.


Bake cupcakes and top with icing. I found the cute lego blocks at a local candy store.

These were a HUGE hit with the kids!
