{Lego Cupcakes}

My son wanted Lego cupcakes for his class. So, I did some research and here is how they turned out...

1st I purchased the mini lego guy ice tray from and colored chocolate disk. Fill each section with desired color of chocolate. I found the baggies with a small snip in the corner worked really well. Pop them in freezed for 5-10 minutes.

When they are finished push out of tray.

Then I used black food coloring and a toothpick to draw on the face. Let dry.

Bake cupcakes and top with icing. I found the cute lego blocks at a local candy store.

These were a HUGE hit with the kids!

Lemonade gift basket. I made this for one of my children's teachers. It included lemonade, cups, napkins, ice cube tray, and note pad in a large colorful tub. Most items were purchased from Target.

{Sunday Dinner Ideas}

Sunday Dinner

{Grilled Duck with Spinach Salad and Wild Rice}

Grilled Duck breast (You could substitute with chicken, beef, or pork)
Teriyaki (enough to cover meat)
1-2 Tablespoons horseradish
2 cloves garlic minced

Marinate meat in covered dish over night. Then grill to your liking.

Spinach Salad:

1 bunch fresh spinach (This was in my co-op box)
2-3 strips cooked bacon crumbled
2 eggs sliced
1 small onion thinly sliced
1 small can  mandarin oranges drained
1 bottle raspberry walnut dressing

Assemble salad in large bowl. Toss before serving with a light coat of dressing.

1 box Wild Rice of your choice
Follow package instructions

There you have it a nice healthy Sunday meal. Enjoy! :)

{Fruit and Vegatable basket from a local CO-OP}

Here is what I received in my $15.00 basket today from:

1 large head Romaine lettuce
1 bundle fresh spinach
1 bundle of radishes
1 head of broccoli
2 large cucumbers
4 large tomatoes
1 bag of seedless grapes
1 container of blackberries
6 tangerines
3 Asian pears
6 Fuji apples
1 1/2 bunches of bananas

Be watching for some recipes utilizing these amazing fruit and vegatables!!!!

I have decided this year my resolution is to be more CA$H-CON$CIOU$. In doing this I have decided to join a food co-op I am going to pick up my first basket this Saturday (So Excited)!
